Blueberry Chia Yogurt Bars

I think Ben thinks I'm trying to poison him with my healthy concoctions. Cant say I don't semi-blame him for thinking that way, when it comes to recipe creating I sure create a LOT of diasters, and unfortunately he's had to try pretty much all of them. I would have thought he would be more excited to try out my latest granola type bars after I made him delicious and chewy whole wheat oatmeal cookies, but then again I did put a good amount of butter in those things. He must like butter. These granola bars don't contain butter, or refined sugar, they are so simple and so healthy. They make a great breakfast on the go, or a simple snack when you have the munchies.

Did I mention they are also easy to throw together? I'll share how I prepared them, then offer a few suggestions for substitutes that might make them easier for you to make if you don't have some of the ingredients I used.

Blueberry Chia Yogurt Bars

makes 10

2 cups Rolled Oats

1/4 cup Sunflower Seeds

3 Tbsp. Chia Seeds

3 Tbsp. Ground Flax

1/2 cup Chobani Blueberry Greek Yogurt

1/4 cup Stevia Baking Blend

1/4 cup Honey

1 cup Frozen Blueberries

Directions:

Preheat your oven to 350 degrees. In a medium bowl combine the oats, sunflower and chia seeds, ground flax. In a separate bowl combine the yogurt, stevia, and honey. Pour the yogurt mixture into the oat mixture and stir well. Now stir in your frozen blueberries very carefully, frozen works better here, or else room temp blueberries will smash. Line a rectangular baking sheet with parchment paper and pour granola bar dough on top and pat out in a nice rectangle shape. Take a pizza cutter and slice the bars before baking to make slicing easier when they are done cooking. Bake for 20-25 minutes and let cool.

Substitutions:

-Quick oats can be use in place of Rolled

-Any finely chopped nuts can be use in place of the sunflower seeds

-Chobani Blueberry Greek yogurt can be replaced with either plain yogurt or another blueberry yogurt of choice.

- Stevia can be replaced with sugar of choice (coconut palm, brown sugar..etc) OR you can leave it out if you use a yogurt that already has extra sugar in it (like most regular store bought yogurts)!

I just love how you can see the ingredients, the rolled oats add such a rustic texture, the chia seeds and sunflower seeds sprinkled throughout, and fresh berries for a pop of color. You can even slice them up into smaller bite sized pieces for young children, which I ended up doing for Judah and he was able to eat it easier without getting frustrated if it broke in half! (My children have break downs if their food breaks! haha)
