Organic Oven Roasted Tomatoes

I adore sun dried tomatoes but don't adore the price. So, I decided to make my own organic oven roasted tomatoes using my choice of organic tomatoes and organic olive oil. Its simple, easy and not even time consuming the only draw back is seeing these big plump tomatoes roasted down to almost nothing! They shrink so much you will want to make a lot. Not only do oven roasted tomatoes taste absolutely delicious, they go with almost everything you make! I use them on pizzas, sandwiches and even in salads to give it a bit of zing. Oven roasted tomatoes are dried so their taste is enhanced ten fold you will want to use these zesty little buggers in everything so buy a lot of organic tomatoes and go to town!

Organic Oven Roasted Tomatoes

Slice your organic tomatoes somewhat thinly.

Lay flat down in a roasting pan on parchment paper and drizzle with organic olive oil and sea salt - I add a bit of oregano and sometimes smoked red chilli pepper.

Bake in the oven (I use my convection oven because it's quicker) at 100c for about an hour and a half to two hours, depending on the thickness of your slicing.

Yum, so good and healthy. Organic oven roasted tomatoes also have a slightly sweet taste to them sometimes when I am craving something sweet, i eat them but on those occasions, I usually slice them slightly thicker.

Remember, the flavour of organic oven roasted tomatoes is highly concentrated so don't go overboard, they can easily drown out the flavour of other vegetables.
